WINEMAKING
Whole cluster press and fermented in a large Rousseau wooden cask for 9 months before transfer to a range of Rousseau Video barrels (25% new oak) for another 6 months of maturation. Indigenous fermentation as well as spontaneous malolactic fermentation. Bottling without filtration imparts a natural light haze.

WINEMAKERS TASTING NOTES AND COMMENTS
This crisp, Burgundian-styled California Chardonnay exhibits classic lemon and pear flavors with hints of pineapple. The mature vineyard and heritage clone sourcing allows an Old World flintiness to express itself, along with a smooth, nutty spiciness from careful use of the finest Rousseau French casks and barrels for fermentation and aging. . The overall impression is of a balanced but crisp California Chardonnay with Burgundian aspirations: a food-friendly Chardonnay which will complement a wide range of dishes, and which opens and expands with time in the glass and a gradual warming to cellar temperature.
